Dr Gimlette

Dr Gimlette is an upscale cocktail bar on Edward Street in one of Brisbane's historic buildings, designed to replicate the world's finest cocktail establishments. The venue's signature feature is its tableside martini service at two 9-meter marble bars, allowing guests to customize drinks with theatrical presentation. The bar occupies heritage space with exposed brickwork, Italian leather booths, hardwood floors, and brass fixtures, stocking over 800 bottles of spirits, aperitifs, and liqueurs alongside beer and wine. Named after Rear-Admiral Sir Thomas Gimlette, the inventor of the gimlet cocktail, the bar operates 5pm–2am with limited nightly reservations and additional walk-in seating to preserve the premium experience.
