Maison Premiere

Maison Premiere in Williamsburg combines an oyster bar, cocktail lounge, and seafood restaurant founded in 2011 by Joshua Boissy and Krystof Zizka, drawing inspiration from the grand hotel lobbies and restaurants of New York, Paris, and New Orleans. The venue features over thirty oyster varieties sourced through direct farmer relationships, the largest absinthe selection in the United States with traditional service via a replica of the famous Olde Absinthe House fountain, and a curated cocktail program designed to complement raw bar dining. Operating with full menu service until 10:30pm daily and weekend brunch service, the establishment earned a 2016 James Beard Award for Outstanding Bar Program and maintains placements on World's 50 Best Bars and North America's 50 Best Bars lists.
