PS40

PS40 is a creative cocktail bar located at 40 King Street in Skittle Lane, co-founded by Michael Chiem and Thor Bergquist as a collaborative space blending their in-house soda factory with craft mixology. The venue features four signature sodas made fresh daily—Wattle Cola, Blackstrap Ginger, Smoked Lemonade, and Bush Tonic—served straight or in ten signature cocktails including the Batanga with green coffee bean-infused tequila and wattle cola. The menu offers small plates alongside a comprehensive wine list and craft beers and ciders. Modern interiors with warm lighting create an inviting atmosphere. Open Tuesday–Saturday 5:00 pm–midnight.
